Smoky Soy Sauce Strawberry Jam

  • 59.86% Sugar
  • 30.09% Mashed Strawberries
  • 5.85% Smokey Soy Sauce Concentrate
  • 2.44% Lemon Juice
  • 1.76% Pectin
  1. Place frozen strawberries in a bowl. Microwave until completely thawed and puree in food processor. Set aside.
  2. Measure and mix ingredients for smokey concentrate. Set aside.
  3. In a separate bowl, measure sugar.
  4. Into a non-stick pot, measure lemon juice, pectin and strawberries.
  5. On high heat, stirring constantly, bring the contents of the pot to a rolling boil (a boil that does not stop boiling when stirred).
  6. Add the sugar to the saucepan. Return to a rolling boil and let boil for exactly 1 minute, stirring constantly.
  7. Remove from heat and add savory/smokey mixture. Stir until fully incorporated.
  8. Skim off foam.
